Effect of Gastric Juice on Protein Lab

In this lab activity, students investigate the effect of pepsin on protein by using the enzyme to digest egg white. Conditions which simulate the human stomach are used to help students better understand the role enzymes play in the digestion of our food. Questions are included which assess their understanding of what occurred in the investigation. Answers are included.
